Wood pigeon is a delicious, rich tasting game bird with many attributes: its flying skills and eyesight make it a difficult bird to shoot—thus testing the skills of the Gun—and as it is a farm pest the landowner welcomes Guns to shoot them. It also makes a fantastic addition to the menu—pigeon breasts are now rather fashionable at Michelin-starred restaurants. The wood pigeon carcase is
so small that most chefs use the fillets only, which are easy to cook and packed full of flavour. Our wood pigeon breasts are from Strefford Hall Estate, Craven Arms. To make it worth the postage, our collection includes six packs of four breasts per box, 24 in all, and food fit for a king. Unless you are having a large dinner, you could serve some fresh when they arrive, then freeze the rest.
