It comes from Rick Stein food hero Rachel of Alternative Meats and it’s a quarter pig, shoulder and loin, weighing some 2kg. It will easily serve six guests for a celebration feast (these suckling pigs are not to be confused with the very small Spanish or European versions).
This suckling pig is delicious slow roasted, the skin producing that crisp, golden crackling, the meat succulent and sweet. And after you have enjoyed the celebration, the pork is also delicious cold the following day.
