Welsh Wagyu T-bone steak is the ultimate for the steak lover. Its large size, containing two of the most prized cuts of beef, T-bone steaks are one of the most sought after. Named for the large t-shaped lumbar bone in the middle, this cut features both sirloin and tenderloin, and here it is, dry aged and delicious, packed with mouth-watering flavour, from Ifor Williams via the Food Heroes at Alternative Meats.

Wagyu is of course the unique Kobe beef from Japan, one of the world’s finest gourmet foods, protected under Japanese law. But from 1992 to 1996, for the first time in Japan’s history they allowed their full-blood black Wagyu males and females to leave the country. Enter Ifor Williams, who raises his Welsh Wagyu on clover-rich pastures. And yes, he feeds them the local Monty’s beer daily and gives an occasional massage as all self-respecting Wagyu cattle require!

Because of its high percentage of monounsaturated fat, Wagyu actually has the lowest cholesterol of all meats, including fish or chicken. Wagyu fat has less saturated fat than other beef because it contains the enzyme delta 9-desaturase, which takes stearic acid (a saturated fatty acid) and changes into oleic acid (an unsaturated fatty acid).
