Château Canon is an iconic Bordeaux château, one of the oldest and most famous in Saint-Emilion with a history of fine vintages. Guide Hachette de Vins awarded the 2006 vintage an excellent two stars—which classes it as ‘vin remarquable’, noting that Canon is ‘one of the emblematic wines of Saint-Émilion’ and continuing: ‘The impeccable alignment of the vines on the limestone plateau contrasts with the maze of underground galleries whose stones were used to build the towns of the region and which are today occupied by barrels. The tasting reveals a 2006 with character . . . dazzling. The bouquet, already very expressive, evokes truffles, leather and tobacco in a trail of undergrowth. The palate appears both full-bodied and elegant. The flavour extends well the impressions of the nose. The tannins are still nervous but very fine. A great wine for laying down, and which can also be enjoyed quite young.’
Influential Bordeaux specialist Wine Advocate-Parker, awarded the vintage 93/100 points, writing ‘Seek this out’ and noting: ‘The 2006 Château Canon has a vivid, kirsch and wild strawberry bouquet with touches of orange zest and marmalade, a touch of mushroom in the background. The palate is medium-bodied with supple ripe black cherry and blackcurrant fruit, sage and melted tar. There is wonderful structure here, superb salinity, completely fulfilling the promise it demonstrated out of bottle. Wonderful focus and vivacity.’
Awarding 96/100, Gilbert & Gaillard note, ‘Intense colour. Clean nose of red and black berrries, delicate oak. Attractively ample palate, silky texture. Both powerful and feminine. Very elegant.’
Château Canon was named after Jacques Kanon, a naval officer who bought the estate in 1760. He built the château here and surrounded it with plantings solely of vines—a rare agricultural practice at the time. In 1996 it was bought by the Wertheimer family from the Chanel group. They have invested heavily in this fine estate.
The 34 hectares of vines grow on a layer of chalk-rich soil veined with clay, perfect for growing Merlot. The Cabernet Franc vines are grown in the better-exposed parcels in order to reach optimal maturity. The harvests are of course carried out by hand. When it comes to vinification, each parcel is put in a separate vat to preserve its distinct identity. The wine is matured in French oak casks for 18-20 months depending on the vintage. What follows is ‘soutirage à l’esquive’, a fastidious racking process that involves separating the wine from its lees in a different way for each cask, without recourse to a pump.
