Britain’s first Iberian pigs were bred not for supermarket shelves, but because Three Michelin-starred chef Brett Graham wanted to produce extraordinary pork for his own kitchens.

Working alongside Shropshire farmer Harry Heath, he developed Britain’s first Iberian breeding programme, combining outstanding animal welfare with regenerative farming and a carefully balanced soy-free diet of beans, peas and home-grown rapeseed meal.

Rich in natural omega-3 oils, the rapeseed reflects the philosophy behind the traditional acorn-based diet of Spain’s celebrated Iberian pigs, while grazing herbal leys throughout their lives allows the animals to develop superb marbling, natural sweetness and exceptional depth of flavour.

Expertly cut, rolled and hand-strung by Rachel at Alternative Meats, this generous boneless leg joint is beautifully succulent, easy to carve and produces magnificent crackling. Supplied fresh, it may be enjoyed immediately or frozen by Members at their convenience.
