With its deliciously rich and creamy taste, Goose Foie Gras bloc, by the world-renowned specialists Rougié of Périgord, France, is fully cooked and perfect for parties, on canapés, and as an easy instant starter for a dinner or lunch party. Nothing could be simpler, or more delicious—this is the same foie gras as sold in the great London food halls of Fortnum & Mason and Harrods. Goose foie gras is creamier than duck foie gras—a popular delicacy with a glorious, delicate taste. The best way to present the foie gras is on its own, in splendour, with warm toast or country-style bread, and adding an accompaniment of, say, dried fruit compote, black cherry jam, quince jelly, fresh figs, gooseberries or white grapes works well, as the sweetness is well matched to the smooth and buttery texture of the foie gras.

If you enjoy foie gras, this bloc is a ‘must-have’ in the store cupboard, as it keeps for several months and is the easiest gourmet food to prepare for unexpected guests: this weight can easily serve six or seven people.

Place it in the fridge for a couple of hours before you need it. Remove it about 15 minutes before slicing and serving.

Serve with a wine such as Sauternes for a heavenly combination. All the wines of south-west France, such as Jurançon or Monbazillac, sweet Bergerac, a pungent Loupiac, or a Sainte-Croix-du-Mont, all bring out the best in foie gras.
