A highly-regarded rosé Champagne which is consistently rated as being in the same league as Champagnes from Houses, the award-winning Devaux ‘Cuvée D Rosé’ NV Champagne is a perfect harmony between Pinot Noir and Chardonnay. It is a beautiful apricot salmon pink colour with an elegant mousse and fresh aromas of small red fruits on the nose, evolving towards floral notes. It is a delightful Champagne with intensely fruity flavours of apricot, redcurrant and raspberry.
Carefully made from a strict selection of Pinot Noir and Chardonnay plots, in which a small part is vinified as a red wine, this Champagne is aged 5 years and boasts a luxurious character to satisfy even the most discerning palate. The high proportion of Chardonnay lends a firm and elegant freshness to the palate, making it the most delicate among its counterparts. The Pinot Noir contributes a delightful burst of fresh red fruit aromas, which are further enhanced by a subtle hint of hazelnut complexity. This complexity is achieved through extended lees ageing, ensuring a sophisticated and well-rounded flavour profile.
Devaux was founded in 1846 by brothers Jules and Auguste Devaux, and was family owned for more than a century. Today, Devaux is owned by the Union Auboise, a co-operative in the exciting Côte des Bar, the heartland of Pinot Noir in Champagne, where the grapes are in huge demand from the top producers. Physically closer to Chablis than Reims or Épernay, the vines are grown on Burgundian soils of Kimmeridgian marl and Portlandian limestone.
Devaux Champagnes are full and expressive yet elegant and refreshing. The flagship ‘Collection D’ range uses only the first quarter of the press (the ‘coeur de cuvée’) and is aged for at least five years, which contributes to the complexity of flavour and integrated, fine mousse. The ‘Cuvée D Rosé’ comprises a minimum of 40% reserve wines, including wine from two solera systems dating back to 1995 and 2002. Devaux age most of their reserve wines in a selection of oak barrels of different sizes, toasts and ages. These are all sourced locally to minimise environmental impact. In fact, the intelligent use of oak in Devaux’s wines led Eric Label, Chef de Cave of Krug, to refer to Devaux as ‘the Krug of the Côte des Bar’.
The intensely fruity palate with delicate notes of redcurrant, raspberry and apricot offers refined finesse. Enjoy D Rosé as an apéritif or with a meal. Try with spicy lobster or monkfish, or duck with sweet herbs or duck magret, foie gras and ceps; it pairs beautifully with hazelnuts added to the dish. For puddings, enjoy with strawberries, caramelized bananas, pastries with passion fruit, brioche, white chocolate, and raspberries, from sweet sauces to
sorbet.
