Parmigiano Reggiano is the finest Italian hard cheese. Made in the Lombardy region of northern Italy, in the heart of Emilia Romagna, it is considered the gourmet choice of hard cheeses. It is still made by Castelli from raw cow’s milk, salt and calf rennet, as it was when first produced 900 years ago.

It is strictly controlled—not to be confused with other cheeses labelled ‘Parmesan’—and has intense aromas and flavours of fruit, nuts, butter and hay. Its high glutamate content produces a savoury, flavour-enhancing quality. Although many people use it as a grating cheese, the Italians consider it more of a ‘table’ cheese—read on for some delicious pairings!

To provide the best milk for the our Castelli Parmigiano-Reggiano, local cows are fed on fresh fodder grown nearby. After making, it is matured for a minimum of 12 months to qualify as Parmigiano Reggiano and after testing, is granted its fire stamp. Parmigiano-Reggiano’s granular texture flakes easily when broken with the stubby, sharp-pointed ‘almond knife’ traditionally used to break and cut the cheese. And those crunchy ‘cheese crystals’ are desirable, a sign of long ageing.

Our Parmigiano Reggiano is aged 22-24 months. This makes it excellent in the preparation of main courses: for example, slivers on fish or meat carpaccio, or on roast beef with garden rocket and a dribble of extra virgin olive oil. It also pairs perfectly with most pasta and rice courses, soups and vegetable creams, grated or in slivers. It is ideal as an aperitif paired with raw vegetables including celery and cherry tomatoes. Its delicate aroma is enhanced by mild fruit chutneys, for example made with kiwi, apricot or melon. It is delicious served with a few drops of aged balsamic vinegar, served with sparkling wine or medium-bodied still white wines. It stores well, so you can enjoy for several weeks.
