Domaine de l’Enclos Chablis 1er Cru Vau de Vey:
Hailing from a 2.77-hectare plot in the Vau de Vey climat, this wine is a testament to freshness and elegance. Its character is a reflection of its location on the left bank of the Serein River, where the vineyards bask in the morning sun. Exposed to the northern breezes and planted on the region’s renowned limestone soils, the grapes here require additional time to reach full maturity; however, the resultant wine proves that the wait was unequivocally worthwhile. This is further complemented by the dedication of the 19-strong team, who carry out manual labor (as the steep slope precludes the use of machinery) and adhere to organic practices, eschewing chemical and synthetic products. This philosophy has been in place since 2010 and continues today, with only a minimal amount of sulfur used at bottling.
Regarding the rest of the vinification process, Domaine de l’Enclos Chablis 1er Cru Vau de Vey is emblematic of wines crafted with minimal intervention. Post-harvest, the grapes of Domaine de l’Enclos Chablis 1er Cru Vau de Vey are subjected to a vibrating table where subpar berries are eliminated. Once sorted, Domaine de l’Enclos Chablis 1er Cru Vau de Vey is gently pressed to extract the juice, which then ferments in stainless steel vats. This stage is crucial as indigenous yeasts begin their work spontaneously, without the addition of any nutrients. Upon completion of fermentation, Domaine de l’Enclos Chablis 1er Cru Vau de Vey is aged in both stainless steel vats and barrels.
