Les Hauts de Milly Chablis is an elegant, premium quality wine which embodies the classic characteristics of Chablis—and this the 2022 vintage is excellent.

Beautifully and carefully made from 100% Chardonnay vines in the villages of Milly and Chichée by Didier Defaix and his wife Hélène Jaeger-Defaix, this classic Chablis has a complex flavour and aroma. Its pale yellow colour and notes of lemon, green apple and white flowers make it a perfect match for seafood, cheeses, or simply as an aperitif.

Located in the region and province of Burgundy, Les Hauts de Milly is a renowned winery in France. The story and history of the wine estate began in 1959 when Monique and Bernard Defaix purchased two hectares of land in the area and ventured into vine-growing and wine-making.

The grapes for this wine come from 12 hectares of vines, all planted on Kimmeridgian soils, giving the wine the classic gunflint and wet stone aromas.

The winery and cellar are located in the small village of Milly, on the left bank of the Serein, where all of the grapes are brought for vinification so that Didier and Hélène can keep a watchful eye over the quality and ageing of their wine. With eight months on fine lees, it displays excellent freshness and purity of fruit.
