Most guests stay close to home, to be pampered at the full-service spa with its crystal steam room, jet pools and holistic therapies from the likes of Ila and Ren, and to dine in the acclaimed Dining Room on the memorable dishes of acclaimed chef Luke Matthews—the food is phenomenal, think Devonshire crab, Quantock duck and dry-aged sirloin beef among the many local ingredients, with herbs, vegetables and even honey from the Chewton Glen kitchen garden. In between there are hours spent lingering by the pool, or in one of the peaceful sitting rooms, or listening to the cocktail hour’s pianist—or perhaps attending the new James Martin & Friends cookery school.
