Second only to Sauternes in popularity with foie gras is Hungary’s Tokaji—not surprising as Hungary is a leading foie gras producer. The wine must be sweet but not cloying and the 2007 Tokaji Aszú 6 Puttonyos, Dobogó, is excellent. Deep gold-yellow, with an orange tinge, it is perfumed and rich, with lovely balance between sweetness, fruit and acidity, keeping the wine fresh to the finish. Perfect for foie gras, fruit or cream puddings—even chocolate is wonderful.
