‘These striploins are from cattle which have lived a happy, sedate life in the quiet Irish and British countryside, left to graze naturally and simply do their thing. Hung for a fantastic finish, these striploins arrive with us aged a very minimum of 28 days, we then mature a further 10 to 15 days, which means when they arrive with you their flavour and texture are at their finest.’ Our Tasting Panel agree: ‘So tender, juicy, well-flavoured and lean, they made delicious roast sirloin for Sunday dinner and the steaks are really good grilled or fried, rubbed with oil or butter, garlic, pepper or herbs. This is great steak for those who like taste but without a lot of fat. Another good thing is you can slice to your own preferred thickness.’
Each striploin is well prepared, wide and straight, just as it should be, with not much difference in width from top to bottom. The fat around the edge is properly trimmed to about 1/8 of an inch all the way around. Each striploin averages 7-9kg and arrives fresh. Expect a perfect joint, ideal to be cut into large roasts or sliced into steaks. It is ready for eating now, or keeping in the fridge for a while longer, or for freezing.
