For the real, full-flavoured taste of turkey, try the original breed, brought from South America in the 1500s and still produced in Norfolk by Robert Garner at Godwick Turkeys, a family farm in Tittleshall, whose turkeys have been winning Great Taste Gold awards for the last three years.
The Norfolk Black, with its deliciously full, gamey flavour and succulent flesh, is as close as possible to the original gamebird, tasting rather like pheasant crossed with turkey —a winning combination of great taste with plenty to go round, and what Robert himself calls ‘a totally different taste, full of aggressive flavour and really very rich’.
He rears his Norfolk Black turkeys traditionally: free-range, in small groups on clover-rich meadows, fed on natural feed, without growth-promoters, additives or antibiotics. Each turkey is hand-plucked, and hung to enhance the flavour—which is wonderful, not only hot but also cold.
Robert is passionate about his turkeys, and highly knowledgeable: he is a former chairman of the Traditional Farm Fresh Turkey Association. As well as Great Taste Gold Awards, they win plaudits from chefs including Antony Worral Thomson and the double-Michelin-star London restaurant The Ledbury, whose chef called it ‘the best I have ever eaten’. Birds arrive by courier (this alone is usually £18.50), oven-ready.
Robert recommends at least 500g per serving.
