To enjoy the richest, juiciest, most tender—and at 1.4kg, the biggest—steak in the world, try this. The large, hand-trimmed, rib-eye steak on the bone is as large as a roasting joint, and the most spectacular way to enjoy the world’s premium steak, Wagyu, or kobe. Considered the ultimate steak experience, it is the unique flavour and marbling of Wagyu which has led to its status as ‘the best beef in the world’—and the bone-in steak from the intensely flavoured ribeye, or scotch fillet, is not only deeply delicious it is eye-poppingly large—and feeding up to four. Each rib-eye, or scotch fillet, provides a hefty portion of this superb steak and a single long bone which truly sets it apart.
These Wagyu beef cattle are raised in Wales on grass, racehorse nuts and beer by Ifor Humphreys, whose stock are descended from traditional Japanese kobe herds. The breed has a naturally high percentage of fat marbling—more marbling of course leading to more flavour, tenderness and succulence as the unusually soft fat melts during cooking. Thus these Wagyu ribeye steaks have far more flavour and tenderness than cuts from other beef. Due in part to its high proportion of monounsaturated fats, plus high levels of omega 3 and 6, it is also healthy—and this Welsh Wagyu rib-eye is a winner of two Gold Stars from the Great Taste Awards. Any steak lover will be wowed when you serve this at your next dinner: it makes a serious centrepiece for a special treat.
