Club Members who enjoy fresh Italian truffles order them from the Club, flown in specially from Italy at wholesale prices. Now in season, fresh Black Périgord Winter Truffles (tuber melanosporum), the best in the world, still traditionally hunted by truffle dogs and with that exquisite aroma and flavour which makes dishes ambrosial.
Top quality, Grade A, the fresh truffles are flown into London every Tuesday direct from Italy by our importers, who also supply top Michelin-star chefs in London and elsewhere. Members’ wholesale price currently starts at £37 for 50g, instead of the usual retail price of £80, and £59 for 100g, instead of the usual £150, both CCUK rates including delivery to your door.
Shave, slice thinly, or grate into a buttery pasta sauce, and the result is heavenly. Transform the taste of meat, fish, soup and risotto—unlike white truffles, the black truffle aroma intensifies when heated. In particular, black truffles are marvellous with rich foods such as foie gras, butter, cheese, cream and oils—and of course the ‘holy trinity’ of pasta, rice and potatoes, bland foods which are superb in bringing out the magnificent flavour of the truffle.
Use the truffles immediately or at least within two to three days to maximise the flavour. Store in an airtight container lined with kitchen roll and place in the warmest part of the fridge (they can be frozen but the flavour is impaired). To give an idea of size, a 50g truffle is about the size of a golf ball. The weights are for guidance, since fresh truffles are sold whole and when you order we will let you know the exact sizes of the truffles which have just been flown into London.
