Turbot is widely recognised as one of the finest fish in the sea—and this superb fresh wild whole turbot is the perfect gourmet fish to serve as a centrepiece at a celebration or dinner party—Rick Stein, who names turbot the best tasting fish in the world, says it it is one of the few fish he would serve as a banquet main course.

The finest fish caught on the British coast, wild turbot is seldom seen on fishmongers’ slabs at a size which is not only large enough for a big party but also has the finest flavour and texture. Plus of course, part of the glory of a turbot is the huge size to which it grows—and these large fish are the only ones to yield sumptuous thick tronçons (steaks with the bone in for the best flavour). These large wild turbot are usually available only to the Michelin Star chefs—and now, we are thrilled to say, to our Members too.

They are caught in the north of Scotland, fresh, wild fish which have that incomparable pearly white flesh and dense, slightly gelatinous yet delicate texture that slides off the bone in pleasingly silky flakes. The flavour is superb, subtle and refined—the wild fish is entirely different to the flabby farmed version which you may find now, shipped in from Spain.

The trick is to cook turbot gently to secure that incomparable taste and silky texture. Rick Stein grills then serves with hollandaise sauce and a slice of lemon—sublime, and it couldn’t be easier.

These whole fresh wild turbot arrive gutted and ready to cook or to slice into tronçons or whatever cuts you wish. They are from 4kg to 6kg (RRP £240 to £360). For you as a Club Member the price will be substantially less than that—for example, a 5kg whole wild turbot this week was £179 delivered.

Bad weather conditions for fishing—and of course limited numbers and the vagaries of catching large wild turbot—both affect availability.
