Of all the caviar sturgeon, the Sevruga (acipenser stellatus) has proved notoriously difficult to farm, and this superb caviar has therefore been extremely limited in supply. The good news is that Laura King MBE of King’s Fine Food has sourced the genuine acipenser stellatus so that now our Members can once again enjoy the finest fresh Sevruga caviar—and at an advantageous price. For comparison, this Sevruga can be seen in the London food emporia at £125 for 30g.

Sevruga caviar has a smaller egg (1.5mm-2mm) than its two counterparts in the top tier of caviar, Beluga and Oscietra, and they are steely black. The flavour is superb—fine, intense, with tastes of the sea and wakame (edible seaweed).

It has a delicious salty flavour which can linger longer on the palate than other caviar—hence some connoisseurs prefer it to all others—‚and we are thrilled to have this fine caviar back in the Gourmet Larder, particularly at these exclusive CountryClubuk prices.
