Today the mills are made at Besançon in south-west France. Nowadays they use machines, but the grinding mechanism has hardly changed in more than a century. The grind is consistently even—a helix-shaped double row of steel teeth guide and hold the peppercorns for a perfect grind—and both salt and pepper mechanisms are adjustable, enabling pepper and salt to be ground to the perfect coarseness or fineness, depending on the dish. The mills have been treated to protect the steel from corrosion and rusting to further improve their durability.
