There is a square in Salamanca which they call the ‘living room of Spain’, not only for its beauty but because Plaza Mayor is the meeting place for many student nationalities coming to this Unesco world heritage city to learn Castilian, Spain’s most popular dialect.

The beating heart of Hacienda Zorita however has to be the wine and food. The wines are from the Marques de la Concordia family wines collection, where nearly 1,400 bottles lay in American and French oak barrels in a cellar built as an homage to Columbus, the roof resembling an upturned ship’s hull.
The excellent restaurant is run by Michelin-starred chef Víctor Gutiérrez whose farm to table policy ensures an endless supply of exquisite fresh regional dishes supplied by produce from the hotel’s own organic farm. Clearly the Dominicans knew a thing or two about hospitality, something Hacienda Zorita Wine Hotel have had 700 years to perfect.
