Berasategui scored a hit from the moment he opened Lasarte, his elegant restaurant in Hotel Condes de Barcelona in the Eixample district of Barcelona. Since then it has gained two Michelin stars and is working towards a third. International food critics and guests extol the cooking, the service, the ambience and all else—and, unusually, the most seasoned gourmet restaurant-goers are as thrille as non-foodies, naming Lasarte top of their entire Michelin-restaurant experiences, with plaudits such as ‘perfection’, ‘excellent from beginning to end’, ‘sophisticated’, with ‘impeccable service’, and ‘worth every euro’.
The Time Out restaurant critic wrote, ‘Martín Berasategui’s embassy at the Condes de Barcelona hotel has become one of the essential restaurants not only in the city but in all of Catalonia and Spain, where people flock to marvel at the creativity of the chef. The sampling menu is a treat that everyone should have the chance to enjoy, at least once in a lifetime, and if possible, once a year.’
Lasarte is elegant yet unpretentious and it offers a dining experience, rather than a straightforward lunch or dinner. Seating only 35 guests, there is time and space for what they call ‘high-voltage gastronomy’. This is delivered by another great chef, Paolo Casagrande, who combines classic Martín Berasategui signature dishes with innovative ideas created especially for Lasarte. And do not be surprised to see (and meet) other famous chefs there, a merry band of culinary brothers all delighting in the food which they are preparing for their guests.
As to the menu, you can dine à la carte, but to really savour the flavours the 12-course Menú Degustación is to be recommended. Starting with aperitivos, this might include such interesting and mouthwatering concoctions as trout tartare and orange and curd cucumber, lightly-smoked oyster on the grill with soft cream of Figueres, small squid râgout and potato bread, vegetable leaves salad, herbs, sprouts and petals with lettuce cream and lobster, tempered beef steak on foie gras curd, iodized salad and mustard ice cream, red prawn on a seabed and fennel with its coral mayonnaise, home yolk with toasted butter, black truffle toast, cauliflower, crunchy black garlic with piment d’Espelette, low-temperature cooked turbot settled on onions and paprika marmalade, braised endive, barnacles gelée and fried breadcrumbs; roast pigeon, ragout of pork, tomato and lemon with apple cream and interiors toast, melon Caipirinha with jelly, lemon-grass ice cream and yogurt, French toast with frozen coffee crème and plum compote, and petit fours . . .
